Among the products that today enjoy the Protected Designation of Origin (PDO) there is Fontina cheese, a fatty cheese with a semi-cooked paste, produced with whole milk from the Aosta Valley; Jambon de Bosses a raw ham spiced with mountain herbs, produced at an altitude of 1600 meters in Saint-Rhémy-en-Bosses at the edge of the Swiss border and Vallée d’Aoste Lard d’Arnad, a cured meat produced from the back of the pig, and then seasoning into “doils” old containers of chestnut wood.
All of them can be tasted together with the many DOC wines produced in the best wineries of Aosta Valley.
